Cheonggukjang: a rustic stew of fast-fermented soybeans — deeper and funkier than miso (think Korean natto, but cooked). Our version is mild, not spicy, and clean-tasting without the strong smell. A protein-rich comfort stew.

How to eat: Simmer for 4-5 minutes, then eat it the Korean way — spoon the stew over rice little by little, mixing as you go.
